Alright, sorry about the bad Oliver Twist joke. I am super excited to share this healthy Girl Scout Cookie recipe because they're super quick and easy with only 4 ingredients!
Prep Time: 5 Minutes
Cook Time: 25 Minutes
What you will need:
2 Ripe Bananas
2/3 Cup Coconut Flakes *I use unsweetened to avoid added sugars*
1 Scoop Protein Powder
1/2 cup Chocolate Chips
*If you like your cookies a little more breadlike- you can always add in a touch of coconut flour and a pinch of baking powder, but I like this recipe as is.*
What to do:
Preheat your oven to 350 degrees while you prep.
In a large mixing bowl, mash up your bananas until they're completely smooth. Next you're going to stir in the coconut flakes until mixed thoroughly. Finally, you're going to add your scoop of protein powder and mix until your dough is formed and set aside.
Cover a baking tray with parchment paper and then roll small spoonful's of your dough into little balls and evenly space them across your tray. If you really want to get the full Samoa experience, you're going to get a little fancy and flatten each ball with the palm of your hand until it reaches the thinness you'd like. Then take a straw, chopstick, the back of a utensil or whatever you have around you and create a hole in the center of each cookie making sure to push together any places that come apart on the edges while doing so.
Finally, cover with chocolate chips, or a melted chocolate drizzle and put them in the oven for 25 minutes until golden brown. These are fricken amazing when they're right out of the oven but just as good when stored in the fridge for 3-5 days!
